The weather is warming up and outdoor get-togethers are about to be in full swing! One of my all-time favorite crowd-pleasing recipes is Cowboy Caviar.
You can throw it together in a few minutes, make it ahead of time, and easily customize it for your specific guests. Out of tomato? Use red bell peppers. Want to add red onions for more flavor–do it! It’s so forgiving, and so good!

Healthy Cowboy Caviar Dip
Ingredients
- 2 cans black beans drained and rinsed
- 2 cans sweet corn drained and rinsed
- 1 pack cherry tomatoes chopped
- small handful of cilantro chopped
- 6 oz crumbled feta cheese
- 1 tsp salt or to taste
- 1 tbsp garlic powder or to taste
- 1 1/2 juiced lemons
- 1/4 cup olive oil
Instructions
- Mix all ingredients together (if not serving right away, leave out feta until ready to serve)
- Serve with tortilla chips
Notes
This recipe is perfect for any warm weather gathering or party. I love that it’s so quick and that I can make it ahead. I also love that it’s healthy and contains lots of great nutrients.
Recipe Success Tips:
- When you add the feta cheese, fold it in last. Don’t overmix it. It won’t look very tasty if you do.
- If you make this recipe ahead of time, you may need to add a little more olive oil, lemon juice, and salt/garlic powder before serving. Sometimes the longer it sits in the fridge, the more it absorbs the liquid and it tends to need a little refreshing.
Serve with:
It’s best served with tortilla chips, but you could also use plain kettle style potato chips or something like a bagel chip or cracker.
Gluten free/Dairy Free
This recipe should naturally be Gluten Free. You will want to check any packaged ingredients you use–like the Feta cheese and the beans/corn. If you use apple cider vinegar instead of lemon juice, you will also want to make sure that is Gluten Free. Use Gluten Free tortilla chips.
To make this Dairy Free, just omit the Feta cheese.
