Healthy Cowboy Caviar Dip

Ingredients

  • 2 cans black beans drained and rinsed
  • 2 cans sweet corn drained and rinsed
  • 1 pack cherry tomatoes chopped
  • small handful of cilantro chopped
  • 6 oz crumbled feta cheese
  • 1 tsp salt or to taste
  • 1 tbsp garlic powder or to taste
  • 1 1/2 juiced lemons
  • 1/4 cup olive oil

Instructions

  • Mix all ingredients together (if not serving right away, leave out feta until ready to serve)
  • Serve with tortilla chips

Notes

Variations:
-Apple cider vinegar instead of lemon juice for a more bitey flavor
-Parsley instead of cilantro
-Black eyed peas in addition to black beans (gives more color variation)
-Add chopped red onions, bell peppers, etc. 
-Add diced avocado or green onions just before you are planning on serving.
