I tried to eat mostly gluten free for years. Refined white bread and baked goods would make me feel inflamed and give me stomach issues. Even sourdough bothered me. I just didn’t feel well eating them.
Enter fresh milled wheat. I have so many good things to say.
Fresh milled wheat has been growing in interest, much like sourdough was for a long time. And for good reason…so many people have issues with grocery store bought bread and wheat products.

Health Improvements I’ve Noticed:
-Don’t get inflamed at all after eating this wheat vs when I eat conventional white bread for a few days I feel inflamed, puffy
-I had 2 warts on my hand (I know gross, that I’ve had since I was younger, completely disappear after starting to eat this bread). This is a super common thing apparently due to the Vitamin E content.
-Increased energy from fresh milled wheat vs sluggish eating grocery store wheat
-Just overall feel better when I’m eating it consistently
-Better bathroom habits for the whole family haha
-My kids just seem to do much better with this type of flour. They get fuller and are very regular in the bathroom with this flour, like I just stated. I know they are eating something nutrient dense vs. nutrient void, all the while eating yummy things like muffins, pancakes, etc.. I feel zero guilt feeding them these things with fresh milled wheat. I just make sure when I make those items I use natural sweeteners and not processed white sugar.
It has 40/44 nutrients we need, which is amazing to me! It isn’t fortified, it naturally contains those things.

How I Discovered Fresh Milled Flour:
This journey started when I started reading through the Bible in a year. I saw so many references to grain and bread. This really started making me question my gluten free stance. Then enter my deep dive into the history of wheat and mills and Sue Becker. She has been the pioneer of bringing wheat back in its original form. She has a podcast filled with testimonials and it’s so good.
The truth is, God never intended us to eat refined, bleached, dead flour. If you research the history of grain and wheat in America what you will find is absolutely astounding. Basically when they took out the germ and the bran, disease skyrocket–hence why white bread is fortified today.
So you’ve been hearing about fresh milled wheat and you’re in…you want to give it a go, but what do you need?
Bare minimum:
- Mill—you can get a nice mill for about $250 on sale but prettier ones will run you more.
I have the Mockmill Lino 100 and I absolutely love it, but it is pricier. I purchased on sale and it is beautiful! Would make a great Christmas gift. The Mockmill Stone Grain Mills are also great, they just aren’t as counter top pretty.
I know that tons of people also love NutriMill. The NutriMill Classic is one of the most cost effective you can get and the one many people seem to purchase. It only runs around $299 but I’ve seen it go down to $250 onsale. - Wheat Berries (My favorite place to purchase for super clean high quality is Barton Mill Springs. Mockmill is another place I’ve purchased and they are very clean but pricier. Other places I’ve tried are Azure Standard, Amazon, but they are not as high quality. Azure was hit or miss with how much debris was in the grain and that grossed me out and was tedious. I barely ever find debris in Barton Mill Springs, just a few small rocks I sift through quickly like any grain. Many people like to go to a local Amish community and purchase as well. ).
- Storage Containers for Wheat Berries-one thing I found out quickly is that if you don’t buy your wheat from a high quality place and if you don’t store it properly, you could get bugs. Gross! I purchased these and have never had a problem.
With the bare minimum you can make so many things like muffins, pancakes, cakes, banana bread…lots of baked goods.

More advanced:
- Mixer with a dough hook–I have and love the NutriMill Artiste
- Loaf pans–this brand makes the best loaf pans. I also love Pampered Chef stone loaf pans
In order to make actual loaves of bread, you will need a mixer with a dough hook or you can also knead by hand. You will also need a few loaf pans.
Nice to have:
- Bread machine -I love this thing! I followed Grains & Grits instructions for programming and get basically a perfect loaf every time.
My inlaws gifted me this bread machine, and this is my favorite way to make bread. It’s just too easy and I can have a fresh loaf done in an hour and a half. I make bread in it at least once a week.
I can’t imagine going back to regular bread now. Although one interesting thing I’ve heard people say about fresh milled wheat is that it has helped heal their gut. And I have noticed that since I started eating it, when I occasionally have regular wheat, it doesn’t bother me as much as it used to. If I eat it multiple days in a row I definitely don’t feel well, but I can tolerate it for a day or so without symptoms now.
