These No-Bake Peanut Butter Granola Bars are the perfect mix of chewy and crunchy. They almost remind me of a way better version of a rice cripy treat—and the 90’s kid in me loves that!
As a parent, it’s so easy to get caught up in the convenience of packaged snacks. But even when they are healthy and not super processed, a homemade snack is most likely always going to be more cost efficient and more nutrient dense.
Our grocery bill has continued to go up and up, and one place we were spending too much on was snacks for the kids. So I set out to find the yummiest replacements that were super QUICK and EASY!
I already make a lot of things from scratch, so adding kids snacks in wasn’t a big priority until I realized how much we were paying and how quickly those things were getting eaten–only to hear my kids say 5 minutes later–“I’m still hungry!” You know how it goes!
These granola bars are super filling and hearty, super delicous, and my kids love them! And I feel so much better about feeding them these, than processed grocery store bars that leave them hungry a few minutes later.

Homemade No-Bake Peanut Butter Granola Bars
Ingredients
- 1 1/2 cups rolled oats
- 1 cup crispy rice cereal
- 2 tbsp ground flaxseed
- 1 cup natural peanut butter
- 1/2 cup honey
- 1.5 tbsp coconut oil melted
- 6 tbsp chocolate chips dark or semi-sweet
Instructions
- Melt and slightly cool coconut oil
- Mix together all ingredients except for chocolate chips
- Once everything is mixed, fold in chocolate chips
- Line an 8×8 pan with parchment paper
- Scoop your mixture into the pan and use your hands to press the mixture into the pan firmly
- Let the bars set in the fridge for 1-2 hours
- Cut bars into 16 squares and enjoy!
Notes

The bars will set up and get firmer the longer you leave them in the fridge.
Storage:
I would store these in the fridge for up to 5 days.
Notes on ingredients:
I love using Sprouted Brown Rice Crisps for my rice cereal ingredients. The ingredients are so good! I got mine at Thrive Market and they have lasted me so long–I’ve probably made these bars about 3 times and still have more. They are really reasonably priced there, but you may be able to find them at a grocery store near you.


Can I make these Gluten Free/Dairy Free/Sugar Free, etc?
Yes!
Gluten free–just make sure all of your ingredients are gluten free, especially your oats and rice crisps–those would be. All of the rest of the ingredients are normally naturally gluten free. You would want to check your chocolate chips and peanut butter too.
Dairy free–use dairy free chocolate chips.
Refined sugar free-use refined sugar free chocolate chips.
