Do your kids love pancakes but you dread spending 20+ minutes standing at the oven flipping them, only to burn half of them? I’ve got the ultimate Mom hack solution for you! Enter pancake bake!
When I discovered pancake bake, I was thrilled. Something I could mix up quickly and bake for 15 minutes and it was done! And the best part is you can add toppings in and bake or you can add the toppings after, that way everyone gets what they want. I couldn’t find a fresh milled flour recipe when I started milling, so I created my own!
Good to know:
I used a 17.75″L x 12.75″W half sheet pan. These USA pans are my favorite if you need some! You could definitely use a smaller pan, but your pieces will be thicker and less pancake like. I would add a few extra minutes onto the cooking time if you use a smaller pan.
The batter will seem like it won’t cover the whole pan, but keep spreading, it will. It will rise in the oven.
Make sure to butter the pan well before adding the batter.

Topping or mix in batter ideas:
-Banana
-Strawberries
-Blueberries
-Pecans or Walnuts
Watch your pancake bake closely and remove when it is a nice golden brown color like below:

Cut into 12 slices and top with butter and maple syrup and any other fruit or nuts you’d like! This is such an easy crowd pleaser!
Quick and Easy Pancake Bake with Fresh Milled Flour
Ingredients
- 2 cups fresh milled flour (soft white wheat) use 1.5 cups of wheat berries to make 2 cups of flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 4 tbsp coconut sugar can sub another sweetener
- 2 cups whole milk can use any milk
- 1 egg
- 1 tsp vanilla extract
- 1/3 cup butter melted
- 1 extra tbsp butter to grease the pan
Instructions
- Preheat oven to 425 degrees.
- Mill wheat berries on finest setting.
- Add all of the dry ingredients to a large bowl and mix.
- Add of the wet ingredients to a bowl and mix.
- Combine wet and dry ingredients and mix well but don't overmix.
- Grease baking sheet with butter or oil of choice.
- Spread batter evenly on baking sheet. It will be thin, but it will rise some in the oven.
- Bake for 15 minutes or until golden. Do not overbake.
Notes
If you are serving this at a brunch or a holiday breakfast, mixing in some of the toppings ahead of time and baking it makes it beautiful! I just made this for my kiddos and they like different things, so I normally wait to top until after it bakes.
